Old-Fashioned Colcannon: A Classic Irish Dish to Spice Up Your Halloween Celebrations

Colcannon is a tritional Irish mashed potato dish, especially popular during Halloween season.
Tritionally, it was believed that an unmarried woman would hide rings in Colcannon to bring luck in finding a husband. Ors would do same like ding coins or or small charms to predict aspects of ir future.

Ingredients
- 1kg (2.2lbs) peeled potatoes
- 2 handfuls of chopped curly kale (cabbage)
- 60g (2oz) butter
- 250ml milk
- A bay leaf
- Salt and pepper to season
Method
- Steam potatoes for about 15-20 minutes, until tender.
- Drain water, and let potatoes dry in ir own steam for 5 minutes before mashing.
- While potatoes are cooking, prepare kale/cabbage. Remove very stalky bits, wash remaining leaves, and boil in a little boiling water until tender – this should take no more than 3-4 minutes. Drain, season and dress kale/cabbage with some of butter.
- Reserve kale/cabbage, and in same pot, bring milk to boil with a bay leaf.
- Mash hot potatoes with butter first, and n grually d milk so you have a delicious creamy mashed potato.
- Season to taste, fold in kale/cabbage and serve on a warm dish with a knob of butter on top.
