Begun Bhaja or Baingan Bhaja is a popular and an easy-to-make dish. This dish is me with thick slices of eggplant soaked in spices. eggplant slices are covered with rice flour and deep-fried. tasty baingan dish is best consumed with rice and dal. Here is recipe of Begun Bhaja that one can prepare at home easily.
Recipe of Begun Bhaja
Chop eggplant into thick slices after washing it. While cutting vegetable make sure it is chopped in cross-section into thick discs. Mix turmeric powder, chilli powder, salt, sugar, and wheat flour in a bowl. d brinjal slices to bowl and cover m with spices which were mixed. Leave mixture for 15 minutes.

During this time, salt and sugar will draw out water from brinjal slices and soften m up. moisture generated assists in mingling flavours well. Do t avoid this step as it will bring out taste of dish well. Heat mustard oil in a skillet. d covered brinjal slices into oil one after or and fry properly on both sides, for nearly 3 minutes, until golden colour appears. Make sure that pan is set on medium-low heat; we want to cook brinjal slices from inside while allowing m to develop a nice crust on outside. sugar in mixture is important and can start burning so, keep an eye on pan well.
As golden colour appears, take out Begun Bhaja from frying pan. Drain out excess oil from dish, or use paper towels to soak it up. Serve dish and enjoy with a coke to enjoy it nicely.
