Scramble your eggs using slight butter instead of oil. Start with sauteing chillies, onion, garlic, tomato before adding the egg. Garnish with coriander leaves before a final mix (optional). For egg curry, start with hard boiling the eggs. Prepare the masala for the curry by grinding onion, tomato, green chilly, and ginger. In another pan, start tempering small mustard seeds, cumin seeds, green chilly, garlic. Add the ground paste into the oil now and cook it until you see a deeper colour of your gravy. Add water, salt, and turmeric powder and cook for 5 minutes at low flame and voila, your anda curry is ready. Use the leftover rice you made for lunch for this recipe. Use a deep pan with oil, saute garlic, green chillies, and add the egg over it (before breaking it, of course). Add the leftover rice over it. Give it a final mix and you are good to go. Garnish with spring onions at the end before serving.
