Perfect scrambled eggs
Ingredients
- 2 large eggs
- 6 tbsp full cream milk or single cream
- A kb of butter
Recipe
- Lightly mix 2 large eggs, 6 tbsp full cream milk and a pinch of salt toger until mixture has just one consistency.
- Heat a small frying pan (n-stick) for a minute.
- d a kb of butter and let it melt (don’t allow butter to brown or it will discolour eggs).
- Pour in egg mixture and let it sit, for 20 seconds, without stirring.
- Stir with a wooden spoon, lifting and folding it over from bottom of pan.
- Let it sit for ar 10 seconds, n stir and fold again.
- Repeat until eggs are slightly runny in places and softly set.
- Remove from heat and leave it for a moment to finish cooking.
- Give a final stir.
- Pack egg in your tiffin and enjoy later.
Akoori (Indian Scrambled Eggs)
Ingredients
- 1 tbsp butter
- 1 small finely chopped red onion
- 1 deseeded and finely chopped, green or red chilli
- 2 crushed garlic cloves
- ¼ tsp ground cumin
- ¼ tsp garam masala
- good pinch of turmeric
- 2 large tomatoes, deseeded and finely chopped
- 7 eggs , beaten
- small pack coriander, roughly chopped
Recipe
- Heat a large frying pan over a low-medium heat and d butter to it.
- Gently fry chilli, onion and garlic until onion is soft, for about 5 minutes. d all spices and cook for 1-2 minutes more, while stirring around pan until aromatic.
- d tomatoes and cook for 1 minute.
- n pour in eggs and lower heat.
- Stir slowly to scramble eggs as y cook and remove from heat while y are still a little runny.
- Continue stirring off heat for 1 more minute until eggs are just set.
- Stir through coriander and pack it in tiffin to enjoy later.
