Eggs contain several minerals and vitamins that are essential parts of a healthy diet. According to an article published by Healthline, eggs provide a number of health benefits like brain health, energy production, strong muscles, good immune system, healthy eye, and so on. Eggs are made in various forms, one of which is scrambled eggs. Scrambled eggs are considered to be an ideal breakfast. Different types of dishes made by scrambled egg are very easy to make and can even be taken in the tiffin. Here are two healthy scrambled eggs recipes. Take a look-

Perfect scrambled eggs
Ingredients
- 2 large eggs
- 6 tbsp full cream milk or single cream
- A knob of butter
Recipe
- Lightly mix 2 large eggs, 6 tbsp full cream milk and a pinch of salt together until the mixture has just one consistency.
- Heat a small frying pan (non-stick) for a minute.
- Add a knob of butter and let it melt (don’t allow the butter to brown or it will discolour the eggs).
- Pour in the egg mixture and let it sit, for 20 seconds, without stirring.
- Stir with a wooden spoon, lifting and folding it over from the bottom of the pan.
- Let it sit for another 10 seconds, then stir and fold again.
- Repeat until the eggs are slightly runny in places and softly set.
- Remove from the heat and leave it for a moment to finish cooking.
- Give a final stir.
- Pack the egg in your tiffin and enjoy later.
Akoori (Indian Scrambled Eggs)
Ingredients
- 1 tbsp butter
- 1 small finely chopped red onion
- 1 deseeded and finely chopped, green or red chilli
- 2 crushed garlic cloves
- ¼ tsp ground cumin
- ¼ tsp garam masala
- good pinch of turmeric
- 2 large tomatoes, deseeded and finely chopped
- 7 eggs , beaten
- small pack coriander, roughly chopped
Recipe
- Heat a large frying pan over a low-medium heat and add butter to it.
- Gently fry the chilli, onion and garlic until the onion is soft, for about 5 minutes. Add all the spices and cook for 1-2 minutes more, while stirring around the pan until aromatic.
- Add tomatoes and cook for 1 minute.
- Then pour in the eggs and lower the heat.
- Stir slowly to scramble the eggs as they cook and remove from the heat while they are still a little runny.
- Continue stirring off the heat for 1 more minute until the eggs are just set.
- Stir through the coriander and pack it in the tiffin to enjoy later.
