Rajasthan, the land of Maharajas is rich in culture. However, the state has a distinctive variety of food. Marwari cuisine is all about ghee. Whether it is a veg dish or a non-veg, ghee is a must-have. The rare cuisine boasting of a never-ending platter with a plethora of dishes, ranges from tangy drinks to mouth-watering starters, along with delicious sabzis with flavours of sweet and spicy chutneys. Not to forget the cuisine is incomplete without Chaach and crunchy desserts that make it a complete meal. Here is a list of the three most iconic food delicacies of Marwari cuisine.

Dal Baati Churma

This is one of the most popular Marwari dishes. It is no less than, a synonym to Rajasthan. Dal baati churma is basically a platter with Baati (little dough balls made of wheat flour, ghee, and milk) served with Panchmel Dal (mix of five different types of lentils prepared with fragrant tempering cumin, cloves, and other spices). The next component in the platter is Churma, which is mashed baatis mixed with jaggery powder and garnished with dry fruits. In the modern era, Dal Baati Churma is also served with delicacies like Boondi Raita and Kadi.

Laal Maas

When it comes to non-veg, Laal Maas is one of the most preferred delicacies in Rajasthan. Laal Maas is a mutton curry prepared in a sauce of yoghurt and a host spices such as red Mathania chillies. The dish is rich in garlic, thick gravy and is served with chapatis made with wheat or bajra. Laal Mass is often served with plain rice in many restaurants.

Ghevar

Ghevar is a Marwari dessert that is a crunchy delight for people with a sweet tooth. It is a disc-shaped sweet cake made of maida and soaked in sugar syrup. This dessert is rich in ghee and made on festivals like Teej and Rakshabandhan. It is also served with Kesar Rabri in some parts of Rajasthan.
