Ingredients for preparing Turkish Red Lentil Soup

  • 1 cup red lentils
  • 2 tbsp olive oil
  • 1 large onion, finely diced
  • 1 large carrot finely chopped
  • 1 tbsp tomato paste
  • 2 tsp cumin
  • 1 tsp paprika
  • ½ tsp dried mint
  • ½ tsp orega
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes
  • 8 cups of water
  • 4 tsp vegetable soup powder or you can replace 4 cups of water with 4 cups of prepared vegetable soup
  • ½ tsp sea salt (as per taste)

For preparing Paprika Oil

  • 3 tbsp of olive oil
  • 1 ½ tsp paprika
  • ¼ tsp red pepper flakes

Method to cook Turkish Red Lentil Soup

  • Take lentils and rinse m 2 or 3 times, drain m and set aside
  • Preheat a large pot on medium heat, pour a little olive oil and sauté onions for 3 mins with a pinch of salt in it. n d carrots and sauté m too.
  • d tomato and mix it well, n d cumin, paprika, dry mint, black pepper, red pepper flakes and sauté m properly to get flavours of spices to bloom.
  • d lentils with water and vegetable soup prepared, and boil it well and n cover pot halfway and let it cook for 15-20 mins.
  • Once lentils are completely cooked, on a side place a small saucepan and make paprika oil by swirling toger olive oil, paprika, and red pepper and cook on a medium flame. After paprika bubbles up, remove pan from heat.
  • After soup is prepared and lentils are tender, blend soup using a blender to reach consistency you desire.
  • Serve Lentil soup with a sprinkle of paprika oil, lemon and extra mint with red pepper to spice soup and beat winters.
