Carrot/ Gajar Halwa
A bowl of hot Gajar Halwa is loved by every Indian. Grated carrots are drained of all their water and infused with green cardamom, cinnamon and sugar. Later, they are cooked in ghee, condensed milk and garnished with a handful of almonds.
Carrot Cake Pancakes
Carrot Cake Pancakes are moist and soft, just like the cake. They are in a beautiful orange colour. The flavour of carrot in pancakes is mild but they are still delicious. Carrot pancakes paired with Cream Cheese Frosting brings the whole Carrot Cake experience. The fluffy, carrot-filled flapjacks can be served with layers of mascarpone cream.
Cinnamon Carrot Muffins
Preheat oven to 350 degrees. Line a standard muffin tin with paper cups. Whisk purpose and wheat flour, wheat germ, cinnamon, baking powder, baking soda, and salt in a bowl. Whisk remaining ingredients in a separate bowl. Spoon batter into cups. Bake about 22 minutes and cool in the pan for 15 minutes and your yummy carrot muffins are ready to serve.
Gajar ki Kanji
Gajar ki Kanji is a delicious super drink that is full of health benefits like sharp eyesight and good skin. It is made with simple ingredients including carrots, mustard powder, red chilli powder, black salt and water. Rinse and peel the carrots and beetroots and chop into long pieces. Mix all the ingredients in a glass, cover with a lid and keep it in sun for 3-4 days. Stir it with a wooden spoon everyday before keeping the jars back in the sun. When Kanji will taste sour, your drink is fermented and is ready to serve or refrigerate.
