•    1 tbsp oil
•    1 sprig curry leaves
•    Â½ tsp mustard or rai
•    3 tbsp coriander leaves finely chopped
•    Pinch of asafoetida or hing

•    Pinch of turmeric powder

First, we will begin by making stuffing for bread pakoda. Once you have boiled the mashed potatoes and peas, mix them well and set aside. Then, heat oil in a pan and add mustard seeds to it. Let them crackle. Then saute ginger, green chillies and curry leaves until you can smell the aroma. Switch off the stove and then begin adding dry powder like chilli, garam masala and turmeric. Follow this by adding mashed potatoes, peas and salt. Mix well until all of them blend together and then let it cool.

Second step is to arrange all the bread slices on a board or a plate and start adding the potato mix on each slice. Then, cover each slice with another and slowly cut them in triangles. Once this is done, heat oil in a pan. While the oil heats, prepare the batter. In another bowl, mix besan, ajwain, chilli powder, salt, rice flour and turmeric. Then, add water to this mix until the batter is not too thick or too thin. Now dip the bread in this batter and gently drop it in the hot oil. Once it starts turning golden brown on both the sides, take it out and serve with ketchup or green chutney.
