Lentils are nutritious legumes that add extra flavour, texture and colour to your food. Lentils basically mean 'dal' in Hindi. Indians are used to having lentils regularly, but there are various other ways of having them too. You can use the lentils of your choice but usually 'chana dal', 'mung dal' would taste well when mixed into a salad. Here we have listed out authentic lentil recipes that can make excellent salads. These European recipes that you can easily make at home.

Mediterranean Lentil salad recipe

For this healthy protein-rich recipe, take a saucepan, add a cup of lentils of your choice, a cup each of diced carrots and onions, 2-3 cloves of garlic, bay leaf, thyme and bring it to boil before simmering it for 15-20 minutes. Remember to cover the lid while simmering and you can switch off the stove when the lentils are tender. Drain the water and remove the bay leaf. Add olive oil, lemon juice, chopped coriander leaves, celery, salt and pepper to taste. Toss to make a dramatic effect and serve when it cools down.

Greek salad with lentils

This healthy salad is made power-packed with greek flavours. Start with boiling a cup of beluga lentils in three cups of water, once it reaches a boiling point, and simmer it down for 20-25 minutes with a closed lid. Drain the lentils once they are tender and set it aside. Once the lentils get cooled, add them with chopped spinach, dried tomatoes, red onion, quartered olives and chopped basil leaves and give it a mix. For the dressing, mix olive oil, the vinegar of your choice, tahini, minced garlic cloves, dried oregano, salt and pepper to taste. For the extra touch, add feta cheese over each serving bowl. This recipe yields 4 servings.
