Old-Fashioned Colcannon: A Classic Irish Dish to Spice Up Your Halloween Celebrations

Colcannon is a traditional Irish mashed potato dish, especially popular during the Halloween season.
Traditionally, it was believed that an unmarried woman would hide rings in the Colcannon to bring luck in finding a husband. Others would do the same like adding coins or other small charms to predict aspects of their future.

Ingredients
- 1kg (2.2lbs) peeled potatoes
- 2 handfuls of chopped curly kale (cabbage)
- 60g (2oz) butter
- 250ml milk
- A bay leaf
- Salt and pepper to season
Method
- Steam the potatoes for about 15-20 minutes, until tender.
- Drain the water, and let the potatoes dry in their own steam for 5 minutes before mashing.
- While the potatoes are cooking, prepare the kale/cabbage. Remove the very stalky bits, wash the remaining leaves, and boil in a little boiling water until tender – this should take no more than 3-4 minutes. Drain, season and dress the kale/cabbage with some of the butter.
- Reserve the kale/cabbage, and in the same pot, bring the milk to the boil with a bay leaf.
- Mash the hot potatoes with the butter first, and then gradually add the milk so you have a delicious creamy mashed potato.
- Season to taste, fold in the kale/cabbage and serve on a warm dish with a knob of butter on top.
