Kale Salad with quinoa
The salad constitutes avocado, quinoa, goat cheese, kale, and pomegranate seeds mixed with a lemon vinaigrette. For the vinaigrette add olive oil, apple cider vinegar, lemon juice. lemon zest, and some sugar. For making the salad, simply toss the veggies along with the vinaigrette dressing for a scrumptious salad which turn out to be one of the appetiser in your parties.
Stuffed Bell peppers
Any stuffed item is generally a crowd pleaser. Try this stuffed bell pepper recipe with quinoa, corn, tomatoes, green chillies, beans and pepper flavoured feta cheese. For making the stuffing, mix the above ingredients along with cilantro, cumin, garlic, onion, salt and pepper for flavour and taste. Preheat your oven at 350 °C. Make a cavity in your red or green bell pepper (capsicum) and add the stuffing. Bake the capsicum until they are tender, it usually takes about 20-25 minutes.
Quinoa fritters (non-vegan recipe)
Make a basic fritter healthy by adding quinoa in your fritters. Start with cook the quinoa in water according to the package instructions. Season your chicken or egg with salt and pepper till then. Roll the chicken or paneer pieces in flour, dip it in the egg mix and then finally coat it with the cooked quinoa. Bake it in the oven for 20 minutes until they are golden brown. Garnish it with cheese and sauce of your choice and bake it again till the cheese melts.
