Begun Bhaja or Baingan Bhaja is a popular and an easy-to-make dish. This dish is made with thick slices of eggplant soaked in spices. The eggplant slices are covered with rice flour and deep-fried. The tasty baingan dish is best consumed with rice and dal. Here is the recipe of Begun Bhaja that one can prepare at home easily.

Chop the eggplant into thick slices after washing it. While cutting the vegetable make sure it is chopped in cross-section into thick discs. Mix turmeric powder, chilli powder, salt, sugar, and wheat flour in a bowl. Add the brinjal slices to the bowl and cover them with spices which were mixed. Leave the mixture for 15 minutes.
During this time, the salt and sugar will draw out the water from the brinjal slices and soften them up. The moisture generated assists in mingling the flavours well. Do not avoid this step as it will bring out the taste of the dish well. Heat mustard oil in a skillet. Add the covered brinjal slices into the oil one after the other and fry properly on both the sides, for nearly 3 minutes, until the golden colour appears. Make sure that the pan is set on medium-low heat; we want to cook the brinjal slices from the inside while allowing them to develop a nice crust on the outside. The sugar in the mixture is important and can start burning so, keep an eye on the pan well.
As the golden colour appears, take out the Begun Bhaja from the frying pan. Drain out excess oil from the dish, or use paper towels to soak it up. Serve the dish and enjoy with a coke to enjoy it nicely.
