Instructions:

In a medium-heated pan, fry the bacon on each side until it has turned brown.

On the other hand, fill the saucepan with 1 cup water, and bring it to simmer. Add in the vinegar. Carefully break 4 eggs into the water and cook it for 2 to 3 minutes, until the whites of the eggs are set but the yolks are still soft. Then, remove the eggs with a slotted spoon.

In the meantime, melt the butter until bubbly in a microwave or a small pan. Make sure you remove the butter before it starts to turn brown.

In a blender or a bowl, blend the egg yolks, crushed pepper, heavy cream, and salt. Blend the ingredients until smooth. Then, add half of the half butter in a thin steady stream. Add in the lemon juice and the remaining butter.

Take the English muffins and slit it into half onto the serving plates. Add 1 slice of bacon and 1 poached egg. Pour the cream sauce, and serve at once.
