Rajasthan is widely known as the land of Maharajas and traditions. It is not only rich in its heritage but is also known for its delicious cuisine. The arid nature of the region, the extreme climatic conditions, scarcity of water and vegetation has witnessed evolvement of unique cooking styles and food habits of the natives that are noticeably different from the other Indian cuisines. Also known as the Rajwadi land of Rajputs, Rajasthan is a paradise for food lovers. Their love for food is evident in their preparations such as daal baati churma is the most celebrated dish of Rajasthan.

Daal baati churma

Daal baati churma is the signature dish of Rajasthan. This famous Rajasthani dish needs no introduction as it is synonymous with the name state’s name. It can rightly be said that your trip to Rajasthan would be incomplete if you do not try daal baati churma there. It is the combination of crunchy baati heavily dipped in desi ghee, eaten along with daal and sweet churma. The dal is locally known as Panchkuti daal as it is a mixture of 5 types of daal. They include chana daal (split Bengal gram), toovar daal (arhar), moong daal (split green gram), urad daal (split black lentils) and whole moong (whole green gram).

The baatis are flaked round bread made of gehun ka aata (wheat flour), rava (semolina), besan (Bengal gram flour), salt, milk, and ghee that are typically served after dipping in desi ghee. Churma is a mixture of unsalted version of the baatis deep fried in ghee, crunched and mixed with jaggery and sugar. At many places in Rajasthan, even Gatte Ki Sabji is served with daal baati churma to add a flavour of typical spicy veggie.

Other well-known, must-try dishes of the land of cultures are, Rajasthani Kadhi, Pyaaz Kachori, Kalmi Bada, Mirchi Bada and flavoured chutneys like Kachri, Imli, Lehsun and Tamatar. Mouthwatering desserts of Rajasthan are the very popular Ghevar from Jaipur, Malpua from Pushkar, Moong Ki Daal Ka Halwa from Alwar, Bajra Ki Raab, Kalakand, Mawa Kachori from Jodhpur and Mohan Thaal also from Gujarat. After having a giant and tasty thali, Rajasthani people would not leave you without serving various types of digestive drinks such as Jaljeera, Masala Chhach or Boondi Raita. These drinks are said to help digest the heavy food easily.
