Gmail appears to be rolling out Dark Mode update to more users. Gmail v2019.08.18.267 is expanding the reach of Dark Mode update by rolling it out to more users. On October 10, Gmail announced they have started rolling out dark mode for Gmail in the latest update and eligible users should see an option to enable Dark Mode in Gmail in case they have iOS 11 and above or Android 10, soon

Gmail Dark Mode: How to get it
If Gmail's Dark Mode is available to you, you should be able to see a theme menu in settings. Options include force Gmail to always light, dark, or follow the system default. In case you are looking forward to enabling it manually, you can do so by following these steps. However, remember that it requires root:
- Navigate to data\data\com.google.android.gm\shared_prefs\FlagPrefs.xml
- Search for "DarkThemeSupport" and change to True. Save.
- Force stop Gmail by navigating to Settings > Apps settings (Steps might differ)
- Re-open. Theme support should be now there in General Settings.

Dark modes have become popular in recent months. Recent iOS 13 and Android 10 updates enable native support for Dark themes across compatible apps. The purpose of Dark themes is to blacken app interfaces thereby reducing eye strain and at the same time, save your phone's battery life.
Meanwhile, a lot of user have complained on Twitter about slow and delayed rollout of Gmail's dark mode.

It’s now been 23 days since @gmail started their rollout of dark mode for their iOS app. They initially said it would take up to 15 days to appear. I haven’t seen any evidence that anyone has actually received it yet.

Do any #iOS users have dark mode with @gmail? Their twitter response is the same (rolling out gradually) when anyone asks when it’s coming. Articles I saw said we should all see it within 15 days. That was 20 days ago. So I’m genuinely curious if anyone on iOS has it.
