Cold soups are sometimes refreshing beverage options. People usually prefer cold soups during the summers. Cold soups are quick and easy to cook. No oven, microwave, or top stove is needed. They can be prepared really fast; it hardly takes 10 minutes to prepare a cold soup. Here are the 2 best cold soup recipes that you and your guests would enjoy:
Cucumber soup
Ingredients

4 cucumbers

1 cup of thick yoghurt

2-3 tablespoon of fresh fennel

1 cup of water
- 1 tablespoon of lemon juice
Steps
- Peel and chop the cucumbers
- Mix all in the blender. To make the consistency as thin as you like, you can add a little cold water if you find the texture too thick.
- You can use garlic bread or croutons to posh it up. Take any bread for croutons, brush with olive oil on both ends, and cut it into cubes. Toast them or fry until it is crispy
- You can also add some sauce. (Optional)
Green pea soup
Ingredients

1 teaspoon of vegetable oil
- 1 large onion
- 2 ½ cups of chicken broth
- ½ teaspoon of salt
- Black pepper
- Frozen peas
- Non-fat yogurt
- Serrano ham
Steps
- Heat the vegetable oil in a large pot over medium-low heat.
- Add the onion, cover and cook for about 5 minutes, stirring occasionally until soft.
- Add the broth, tarragon, salt and a few turns of fresh black pepper to a boil.
- Remove the peas and cook until they have been defrosted.
- Puree the soup in a blender until it is very creamy.
- Add the yoghurt and put it inside the fridge to cool before serving.
- Place a thin slice of Serrano ham on top and garnish with basil sprig later.
