The fruit has gotten its fair share of hype in recent years. While we love our basic avocado toast, there are so many incredible dishes that include this creamy, delicious fruit. Avocado Tomato Salad

Ingredients: extra-virgin olive oil, Juice of one lemon, cumin, kosher salt, black pepper, avocados, cherry tomatoes, small cucumber, corn, Jalepeño (optional), chopped cilantro

Method: In a small bowl, whisk together oil, lime juice, and cumin. Season dressing with salt and pepper. Later, in a large serving bowl, combine avocados, tomatoes, cucumber, corn, jalapeño, and cilantro. Gently toss with dressing and serve immediately.

Avocado, Cheddar, and Sprouts Pockets

Ingredients: sprouts, Red Onion, lime zest, lime juice, salt, pepper, mayonnaise, olive oil, avocados, large pocket-style pitas, sharp white cheddar cheese

Method: Toss the sprouts and onion together and set aside. Mix the zest, juice, salt, and pepper in a small bowl. Stir it with mayonnaise and olive oil and set aside. Divide the avocado slices among the pita halves and place them inside the pocket. Divide the sprout mixture among the sandwiches, tucked inside on top of the avocado. Add the cheese slices and drizzle with lime dressing.

Avocado Ice Pops

Ingredients: water, sugar, chopped peeled avocado, lime rind, lime juice, kosher salt

Method: Combine water and sugar in a saucepan on medium heat. Cook 4 minutes until sugar dissolves. Rest it until it cooldowns to room temperature. Place sugar mixture, avocado, lime rind, lime juice, and kosher salt in a food processor; process until smooth. Divide mixture evenly among 6 ice-pop moulds. Top with lid. Freeze 4 hours or until thoroughly frozen.

Avocado Mac & Cheese

Ingredients: Avocados- peeled and pitted, plus more for garnish, lemon juice, unsalted butter, all-purpose flour, whole milk, kosher salt, black pepper, shredded white cheddar, freshly grated Parmesan, fusilli pasta-boiled

Method: Place avocados in a medium bowl and add lemon juice to prevent browning. Mash until smooth. In a large saucepan, melt butter. Sprinkle in flour and cook until slightly golden. Pour in milk and whisk. add salt and pepper. Let simmer until it starts to thicken. Turn off heat and add mashed avocado and cheese and whisk until smooth. Add pasta and stir in cheese sauce. Season again with salt and pepper if needed and serve.

Chocolate Avocado Pudding

Ingredients: dark chocolate chips-melted, ripe avocados, raw unsweetened cocoa powder, non-dairy milk (chocolate or vanilla), maple syrup, pure vanilla extract, pinch sea salt

Method: In a food processor blend melted chocolate, avocados, cocoa powder, non-dairy milk, maple syrup, vanilla, and salt until it becomes smooth. Divide mixture among four jars and garnish the top with chocolate chips or dark chocolate shavings. Store in the fridge until ready to eat.
